Sushi Kamon have created a new special for their 14 course Omakase experience this month: Japanese sea urchin roe, or uni.
One of the few remaining delicacies in the world that requires meticulous harvesting, sea urchins are hand-cut by expert scuba divers across the seas. Beneath the sea urchin’s spiny exterior lies an unexpected delight in the form of five ‘tongues’ of brightly coloured uni. This soft and creamy delight is nicknamed ‘the foie gras of the sea’ for its buttery texture and brings a hit of umami to the Omakase experience.
